+Fresh fruits and vegetables are great, but they are available for such a small part of the year that I look for ways to save some for winter months.
+So for me preserving some of the things we grow or buy locally is a focus.
+We freeze (beans, peas, blueberries, raspberries, strawberries), we can (tomatoes, peaches, and peppers in salsa), we dehydrate occasionally, though we're not yet into how to effectively use some of the dried fruit, and we store some vegetables in a root cellar (potatoes, onions, squash, beets, carrots).

+Some of these ways of preserving food are still a new frontier for us so we spend some time figuring them out.
+And we're learning that a big challenge is finding the space to store produce, especially frozen and canned. But these are nice challenges.
