Canning

Our shelves of canned itemsWe don't have a pressure cooker so all our canning is in a water bath. That didn't keep us from stocking our canning shelves in good style. See the canning photos here.

Tomatoes

The hoop house made all the difference: lots of healthy tomato plants and lots of tomatoes on the vines. Each harvest was relatively small, but we ripened in the house when necessary. Eventually we had many jars of beautiful tomatoes.

See the Tomato canning page for our canning procedure or the some photos of our tomato canning process.

Salsa

In 2014 for the first time we had a lot of peppers (from the hoop house). Along with a bumper crop of tomatillos and some early tomatoes we made lots of salsa: green salsa, tomato salsa, mild salsa and zesty salsa. We just need a case of chips for the year.

Fruit

Peaches

We bought 25 pounds of peaches from Calhoun Family Farm and canned them. Really good flavor!

Strawberries

We had a lot of strawberries in 2014, not all at once, but over a couple of weeks they added up and we made some luscious strawberry jam.

Raspberries and blackberries
